it's better to start with chicken because it has a better ratio of bones to meat. you need to have bones at a ratio of about 10-15% of the total. Beef bones tend to be hard to break and digest, especially the weight bearing bones like leg bones. I start with chicken leg quarters- two or three weeks and then add little slivers of liver, then add in different proteins like beef and pork. You also need to add fish oil pills and vitamin e (one pill of each once a day) and that's it. You can start with the next meal- no problem.
